Fall The Way

Once apples come in season, wild horses couldn't drag me away from them. So begins my Fall One Bowl Wonder season with something that looks a little like this healthy and high in protein bowl that is easily made vegan! I'm low key obsessed with meals that include all 6 Ayurvedic flavors: astringent, spicy, bitter, sour, sweet, salty. This one ticks all the boxes!
Ingredients:
- 1 cup quinoa
- 10-16oz sliced andouille sausage (I like this chicken sausage by AmyLu at Costco but you can use any kind of cooked, spicy sausage, including plant-based, and cut it into coins)
- 3 cups of arugula
- 1 honeycrisp apple, diced
- 4 dates, chopped
- Balsamic vinaigrette
- 1/4 cup salted pepitas
- Sea salt and fresh cracked pepper
Instructions:
- Prepare the quinoa in a rice cooker or according to package instructions
- Cut the cooked sausage into coins
- Dice your Honeycrisp apple (or whichever apple you love best)
- Chop the dates
- Prepare your balsamic vinaigrette or have your favorite one handy
- Combine quinoa, sausage, greens and apple in a large salad bowl.
- Toss with dressing to your liking
- Toss in the chopped dates
- Top with salted pepitas
