Fall The Way

Once apples come in season, wild horses couldn't drag me away from them. So begins my Fall One Bowl Wonder season with something that looks a little like this healthy and high in protein bowl that is easily made vegan! I'm low key obsessed with meals that include all 6 Ayurvedic flavors: astringent, spicy, bitter, sour, sweet, salty. This one ticks all the boxes!


  • 1 cup quinoa
  • 10-16oz sliced andouille sausage (I like this chicken sausage by AmyLu at Costco but you can use any kind of cooked, spicy sausage, including plant-based, and cut it into coins)
  • 3 cups of arugula
  • 1 honeycrisp apple, diced
  • 4 dates, chopped
  • Balsamic vinaigrette
  • 1/4 cup salted pepitas
  • Sea salt and fresh cracked pepper


  1. Prepare the quinoa in a rice cooker or according to package instructions
  2. Cut the cooked sausage into coins
  3. Dice your Honeycrisp apple (or whichever apple you love best)
  4. Chop the dates
  5. Prepare your balsamic vinaigrette or have your favorite one handy
  6. Combine quinoa, sausage, greens and apple in a large salad bowl.
  7. Toss with dressing to your liking
  8. Toss in the chopped dates
  9. Top with salted pepitas
