When I make One Bowl Wonders, I love to combine flavors, textures and temperatures. When it comes to flavors, I try to include as many of the 6 Ayurvedic flavors as I possibly can. It is believed that the most well-balanced, nourishing meals reflect all 6 tastes: sweet, salty, sour, astringent, bitter, pungent (spicy). So when Kashi asked me to shift gears and make a breakfast One Bowl Wonder, I wanted to stay true to my process and combine hot oatmeal with cool, smooth yogurt and dry, crunchy Kashi as well as fold in all 6 Ayurvedic tastes!

Nutso For This Soup
This soup was definitely inspired by "Hmmm, what do I have in the kitchen today?" but ended up thick, hearty and soul-satisfying in a way I didn't expect! I think the African-peanut-stew-inspired addition of nut butter and nuts pushed it over the delicious edge and then the Thai-inspired lime juice at the end is EVERYTHING. It's spicy, sweet, sour, astringent and delicious every way you look at it!

Root veggies are to Fall as fruits are to Summer so to kick off Fall, I always bring out the beets! Beets are high in important vitamins and minerals, are thought to support athletic performance, are high in fiber and may support brain health! If you aren't sure if you like them, this could be a great dish to try them again. The apple brings a brightness to the earthy beets and the saltiness of the feta/vegan feta is a partner. Git some.

The combination of zucchini and dill is just...magnificent. I'm not sure why. Dill and cucumbers, for sure. Maybe because zucchini look like cucumbers?! Whatever the reason, they are two things that love each other so I never make zucchini without its pal Dill. This wholesome bowl is EASY and when there's fresh corn (summer!), add that. When there isn't, you can leave it out and its still delicioso.
