Nutso For This Soup
This soup was definitely inspired by "Hmmm, what do I have in the kitchen today?" but ended up thick, hearty and soul-satisfying in a way I didn't expect! I think the African-peanut-stew-inspired addition of nut butter and nuts pushed it over the delicious edge and then the Thai-inspired lime juice at the end is EVERYTHING. It's spicy, sweet, sour, astringent and delicious every way you look at it!

Beets are high in important vitamins and minerals, are thought to support athletic performance, are high in fiber and may support brain health! The combination of zucchini and dill is just...magnificent. I'm not sure why. Dill and cucumbers, for sure. Maybe because zucchini look like cucumbers?! Whatever the reason, they are two things that love each other so I never make zucchini without its pal Dill. This wholesome bowl is EASY and when there's fresh corn (summer!), add that. When there isn't, you can leave it out and its still delicioso.
