Hot Honey Cottage Cheese Sweet Potato Chicken Bowls

This looked like such a bizarre dish when I saw it go viral on TikTok. But since I liked all the separate ingredients, I thought I'd give it a try and fell in LOVE. And it's so easy for those nights I don't have the energy to make much but still want to eat in alignment with my values and goals. The viral recipes use ground beef, but I much prefer ground chicken, thighs if you can! And making your own taco seasoning is easy and always more delicioso!
Serves 3-4
Ingredients
- 2 large sweet potatoes peeled and cubed OR 1 whole sweet potato per person
- 2 tbsp olive oil (if roasting)
- 1 lb ground chicken
- 2 tbsp taco seasoning (store bought or make mine, see below)
- 1 tbsp tomato paste
- 1/2 cup cottage cheese per person
- ½ avocado per person, diced
- 1 tbsp hot honey or to taste per person
- Cilantro garnish (optional)
Instructions
There are two possibilities for the sweet potato based on your preferences. Either peel, cube, season and roast OR bake whole. Either way, pre-heat your air fryer (400) or your oven (425).
- Toss the sweet potato cubes in oil and season generously with salt and pepper. Air fry, in a single layer, at 400°F for 10-15 minutes, or until golden and cooked through, shaking halfway. Or use a fork to poke with holes all over and bake in your oven at 425°F for 45-60 minutes depending on size.
- While the sweet potatoes are cooking, cook the ground chicken in a large skillet over medium high heat. Break up the chicken and stir in the tomato paste. Sprinkle on the taco seasoning. Continue to cook, stirring occasionally, until browned and cooked through. Set aside.
- When the sweet potatoes are crisp and cooked through (or soft and cooked through if baking), assemble the bowls by placing the sweet potatoes at the bottom of the bowls. Top with ground chicken, then cottage cheese, then diced avocado and top with hot honey. Feel free to garnish with any fresh herbs like cilantro.
Taco Seasoning
Ingredients
- 2 tsp ground cumin
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp ground coriander
- 2 tsp smoked paprika
- 1 tsp freshly ground black pepper
- 1 tsp kosher salt or to taste
- 2 tsp dried Mexican oregano optional
- 1/8 tsp ground cayenne pepper optional
Instructions
- Mix all the ingredients in a small bowl and use immediately or store in an airtight jar.
