Meal Prep Chicken

This is the chicken recipe I make every week for my meal-prepped lunches so I'm nailing my protein goals. You can always change up the seasoning to your liking or marinate the chicken another way prior to cooking but this version is quick, easy and reliable and requires no chopping so I stick with it. I usually double the recipe!

Ingredients

  • 2 pounds boneless skinless chicken thighs (or boneless skinless breasts pounded to even thickness)
  • 2 Tbsp olive oil
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ¼ tsp cayenne pepper

Instructions

  1. Preheat the oven to 425°F. Pat the chicken dry with paper towels and place them in a large bowl.
  2. Add the olive oil and toss to coat
  3. Add spices and toss to coat
  4. Arrange the seasoned chicken in a single layer on a parchment lined baking sheet or a 9x13 glass baking dish.
  5. Bake uncovered until the chicken are cooked through, juices run clear, and an instant-read thermometer inserted into the middle of the largest piece reads 165ºF. Exact duration depends on your oven and the size of your pieces but for thighs begin checking at 25 minutes and for breasts begin checking at 20 minutes.
  6. If you want more carmelization on top, broil them for 3-5 minutes once they’re done cooking.
