When I was living in Kansas City, my favorite place to eat was a luncheonette called Happy Gillis. Mismatched s&p shakers, great sandwich bread, epic chocolate chip cookies and the world's greatest chicken salad. I do not consider myself a chicken salad person. At all. But I love to ask what the staff loves and someone recommended this and I've never looked back. It's INCREDIBLE. I included a vegetarian option too!

Chimichurri is a bright, punchy, herbaceous sauce with roots in South America and it goes well with just about EVERYTHING. I especially love it for summer when herbs are abundant and it's too hot to cook inside so everything gets grilled. While your veggies or meats are grilling, whip this up and serve it right alongside. It makes everything taste like a summer party!

Thai-inspired soups always seem so perfect to me in the "shoulder" season in late Fall, where Summer is still fresh in your mind but the early mornings and late nights are feeling like winter. The coconut milk in them is like a nod to summer but their heartiness says, winter is coming. Enjoy this one, definitely a favorite in this household!

Thai Chicken Salad

Thai Chicken Salad
I love how Thai food combines things I love like coconut milk, lime and cilantro.  I was craving those flavors and wanted a salad but needed something more substantial than just lettuce so I added some cilantro-lime basmati rice and basically made a chopped Thai salad with peanut sauce on top. It's a keeper!
