Beets are high in important vitamins and minerals, are thought to support athletic performance, are high in fiber and may support brain health! If you aren't sure if you like them, this could be a great dish to try them again. The apple brings a brightness to the earthy beets and the saltiness of the feta/vegan feta is a partner. Git some.

The combination of zucchini and dill is just...magnificent. I'm not sure why. Dill and cucumbers, for sure. Maybe because zucchini look like cucumbers?! Whatever the reason, they are two things that love each other so I never make zucchini without its pal Dill. This wholesome bowl is EASY and when there's fresh corn (summer!), add that. When there isn't, you can leave it out and its still delicioso.

This is like a hug in a bowl! The ricotta cheese (nut or regular) coats the noodles and then broiled broccoli, kale and garbanzo beans contrast perfectly with the creamy goodness of the noodles.
