Watermelon Salad

By Gina Caputo

Watermelon Salad
This is such a simple One Bowl Wonder and my absolute favorite for the hottest summer days. Sweet watermelon combines beautifully with salty feta, bitter arugula and spicy grilled chicken or tofu with a tangy lemon vinagrette. Major crowd pleaser right here.

Chicken/Chickpea Salad

By Gina Caputo

Chicken/Chickpea Salad
When I was living in Kansas City, my favorite place to eat was a luncheonette called Happy Gillis. Mismatched s&p shakers, great sandwich bread, epic chocolate chip cookies and the world's greatest chicken salad. I do not consider myself a chicken salad person. At all. But I love to ask what the staff loves and someone recommended this and I've never looked back. It's INCREDIBLE. I included a vegetarian option too!

Overnight Oats with Mango Milk

By Gina Caputo

Overnight Oats with Mango Milk
I loved my Overnight Oats with Blueberry Milk so much that I started to get creative with more fruit milks in my overnight oats. And this tropical delight was a big WIN!! Mangoes are in season right now - you can use frozen ones or chop up fresh mango if you prefer. Cool oats are especially good in the summer when you don't want a bowl of hotness to start your day!

Balanced Breakfast Bonanza Bowl - Ayurveda Breakfast Bowl by Gina Caputo

When I make One Bowl Wonders, I love to combine flavors, textures and temperatures. When it comes to flavors, I try to include as many of the 6 Ayurvedic flavors as I possibly can. It is believed that the most well-balanced, nourishing meals reflect all 6 tastes: sweet, salty, sour, astringent, bitter, pungent (spicy). So when Kashi asked me to shift gears and make a breakfast One Bowl Wonder, I wanted to stay true to my process and combine hot oatmeal with cool, smooth yogurt and dry, crunchy Kashi as well as fold in all 6 Ayurvedic tastes!

Summer's Greatest Hits

By Gina Caputo

Summer's Greatest Hits
If you could put all of summer's greatest hits into a single bowl, this would be it. Juicy watermelon meets tangy pineapple meets sweet corn meets creamy avocado all partying together on a bed a hefty romaine lettuce and garbanzos with party favors in the forms of salty pepitas and cilantro leaves. As August slides into September, this is a One Bowl Wonder to celebrate summer's bounty and the delicious things in life.
