A vegan Spring soup that uses the veggies of the season that just all happen to be green. Note - the peas and the splash of lemon juice MAKE this soup. I add beans for protein and some bite, you could also add a small pasta in this soup if you'd like to make it even heartier.

Wild rice seems so...rustic. It's hearty and earthy and I don't use it nearly enough. It started there. But the real star of this One Bowl Wonder? THE PEANUT BUTTER-MISO SAUCE. Maybe it's just me but I want this flavor again and again. Next time I'm doubling the amount of sauce so I can put it on other stuff just to see how it holds up. But the pairing of that sauce with sweet potatoes was EPIC.

I love how Thai food combines things I love like coconut milk, lime and cilantro.  I was craving those flavors and wanted a salad but needed something more substantial than just lettuce so I added some cilantro-lime basmati rice and basically made a chopped Thai salad with peanut sauce on top. This was one of those OBWs that I had no major expectations about, just an experiment and then I freaked out on how delicious it is, no fewer than 79 times while we ate it. It was ridiculously simple for the depth of flavors and super satisfying texture too. One of those dishes that is somehow dense in satisfaction but light in your system?! Whips up in no time and can easily be made vegan!
