Lime In The Coconut Chickpea Stew

By Gina Caputo

Lime In The Coconut Chickpea Stew
One day during quarantine I got a wild hair to use mostly pantry items to make a stew but I still wanted it to be high in protein. So I ended up making a chickpea on chickpea stew with a coveted can of coconut milk! This is easy, delicious and can be served on its own, over rice or you can dip pita or naan in it. AND if you listen to Harry Nilsson's song Coconut while you make it, it's guaranteed to be infused with that special spice called FUN.

Pesto Powerball Soup

By Gina Caputo

Pesto Powerball Soup
This is a classic, hmmm what do I have in the kitchen One Bowl Wonder. I had the makings for soffritto (fancy Italian word for carrots, celery, and onions) which always makes me think of soup. That week, greens were hard to come by at the store but I had just made a pesto with supergreens and basil and still had it in a jar in the fridge. Add protein balls and it felt very rustic and old country in the best possible way.

Devlishly Delicious
This pot o' goodness is inspired by a dish I saw called Lentils Diavolo, which is Italian for devil and refers, in food, to a spicy sauce. I kicked it up with extra veggies and a different source of fire. It's vegan, hearty, easy and can be served alone or on top of couscous (pictured here is Israeli couscous), small pasta noods, rice, farro, polenta, or potatoes.

Bean Feeling Spicy Lately
This spicy stick-to-your-ribs stew is super versatile. It can be made anything from vegan to omnivore and you have the power to adjust the spicy level to suit your tastes! This protein-rich stew is satisfying on its own for anyone eating low-carb but fresh bread makes a perfect partner too. Or serve it over rice or polenta! No matter what, don't forget the lemon juice at the end!

Italians Do It Better

By Gina Caputo

Italians Do It Better
Hands-down one of my most favorite dishes to make (and EAT) ever. Risotto is always going to be somewhat labor intensive with the constant stirring and ladling of broth but it's a super fun dish to cook with friends hanging out at the kitchen counter while playing music. In my house, we celebrate the Italian tradition of Feast of the Seven Fishes on Christmas Eve and this is a family favorite. This is comfort food at its finest and the addition of lemon brings some light, high notes to a rich and creamy dish.

Feel The Beet

By Gina Caputo

Feel The Beet
Root veggies are to Fall as fruits are to Summer so to kick off Fall, I always bring out the beets! Beets are high in important vitamins and minerals, are thought to support athletic performance, are high in fiber and may support brain health! If you aren't sure if you like them, this could be a great dish to try them again. The apple brings a brightness to the earthy beets and the saltiness of the feta/vegan feta is a partner. Git some.
