Super Summer Salad

I planted a vegetable garden this year and the greens have been POPPING OFF! So it's been super salad One Bowl Wonders every night just to keep up! This one can be topped with grilled chicken, a grilled portabello mushroom or a grilled piece of extra firm tofu all with the same marinade!

Ingredients for the marinade: 

  • 3 Tbsp balsamic vinegar
  • 3 Tbsp minced ginger
  • ½ tsp sea salt
  • 1/8 cup olive oil
  • 1 to 1 ½ boneless, skinless chicken thighs per person OR
  • 1 to 1 ½ Portobello mushroom or slice of firm tofu per person

 Ingredients for the salad:

  • Mix of chopped herbs like cilantro, Italian parsley, basil, mint
  • 2 diced nectarines or peaches
  • 3 cobs of corn, briefly boiled, cooled and cut off the cobs
  • Pinch of sea salt
  • Mixed greens (lettuces, spinach, chard)
  • Arugula (ok, technically also a green but its bitterness is key!)
  • Balsamic vinaigrette

Instructions for the chicken, mushrooms or tofu:

  1. Remove from marinade
  2. Grill until done to your liking
  3. Let rest and then slice

Instructions for the salad:

  1. Combine the first 4 ingredients and set aside
  2. Meanwhile clean your greens and chop/tear as needed
  3. Dress the greens to your liking, toss
  4. Add the herbs, nectarines, corn mixture, toss

Portion the salad into large bowls for each person and top with grilled, sliced chicken, mushroom or tofu.
