Pumpkin Chili

By Gina Caputo

Pumpkin Chili
Hands down the best chili I've ever made or ever eaten! Who knew?! I don't identify as a major pumpkin lover but it lends something really special to this spicy, protein rich chili that's perfect for a chilly night and makes amazing leftovers! The flavors just keep melding! It's also SUPER easy to make with most ingredients coming from your pantry! You can easily make it vegetarian by omitting the sausage and adding your favorite hot sauce!

White Bean & Kale Soup

By Gina Caputo

White Bean & Kale Soup

Kale yeah! This is SOUPer simple and delicious. I recommend taking the time to soak dried cannelini beans (I order mine online) because I find the canned ones of this particular bean are just mush. And that little blast of lemon juice at the end? Absolutely zingy delicious!

Chicken/Chickpea Salad

By Gina Caputo

Chicken/Chickpea Salad
When I was living in Kansas City, my favorite place to eat was a luncheonette called Happy Gillis. Mismatched s&p shakers, great sandwich bread, epic chocolate chip cookies and the world's greatest chicken salad. I do not consider myself a chicken salad person. At all. But I love to ask what the staff loves and someone recommended this and I've never looked back. It's INCREDIBLE. I included a vegetarian option too!

Maybe it's just me but I want this flavor again and again. Next time I'm doubling the amount of sauce so I can put it on other stuff just to see how it holds up. But the pairing of that sauce with sweet potatoes was EPIC.

Summertime Protein Power
While I didn't originally intend to make this a One Bowl Wonder post, it go so much action on Instagram that I'm putting it here after all! It's a kicked up caprese salad that uses chickpea pasta AND chickpeas as well as that inimitable summertime fresh corn. Vegetarian protein at its best!
