Peanut Butter Miso Protein Balls

Many of you know my One Bowl Wonders, well 2020 gave me the gift of becoming obsessed with making all kinds of One BALL Wonders. These are snack-sized bites that pack a super satisfying punch! If you love peanut butter like I love peanut butter, you're gonna LOVE these. Beware of housemates and partners that might eat them 6 at a time. I hide mine 😬
Ingredients:
- 1 cup de-fatted peanut flour (you can also use oat flour!)
- ½ cup powdered peanut butter (I use PB Fit)
- 2 scoops unflavored protein powder
- 1/3 cup mild white miso paste
- 1/3 cup peanut butter without sugar
- 1/3 cup honey
- 1 Tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/3 cup mini chocolate chips (optional)
Instructions:
- Mix the flour, powdered peanut butter and protein powder together in a large bowl
- Add the miso paste, peanut butter and honey
- Melt the coconut oil and add
- Add the vanilla extract
- Stir well to combine thoroughly
- Add the mini chips if using and combine well once more
- Use a small ice cream scoop or make 1.5” balls with your hands
- Place on a parchment lined cookie sheet and pop in the fridge for at least 30 minutes. Store in the fridge!
