This is a classic, hmmm what do I have in the kitchen One Bowl Wonder. I had the makings for soffritto (fancy Italian word for carrots, celery, and onions) which always makes me think of soup. That week, greens were hard to come by at the store but I had just made a pesto with supergreens and basil and still had it in a jar in the fridge. Add protein balls and it felt very rustic and old country in the best possible way.

Nutso For This Soup
This soup was definitely inspired by "Hmmm, what do I have in the kitchen today?" but ended up thick, hearty and soul-satisfying in a way I didn't expect! I think the African-peanut-stew-inspired addition of nut butter and nuts pushed it over the delicious edge and then the Thai-inspired lime juice at the end is EVERYTHING. It's spicy, sweet, sour, astringent and delicious every way you look at it!

This pot o' goodness is inspired by a dish I saw called Lentils Diavolo, which is Italian for devil and refers, in food, to a spicy sauce. I kicked it up with extra veggies and a different source of fire.
